Contractor - Touring
Bluecoats, Inc. is seeking to hire a contractor from mid-June to early August to manage the tour foodservice operations for the Bluecoats Drum & Bugle Corps.
This individual will manage a team of between three and seven volunteers, as well as the Assistant Foodservice Manager. A qualified candidate will have experience managing a commercial kitchen, be energetic and empathetic, and ready for the rigors of serving 900 meals per day on a 10,000 mile summer tour.
Ensure the safe preparation and service of 900 individual meals every day on a commercial kitchen food trailer. This includes the planning and preparation of agreed-upon special dietary meals.
Preparation managements includes ensuring that all food safety procedures and policies are followed.
Manage a team of one Assistant Foodservice Manager and 3-7 volunteer cooks. Management includes setting report times, establishing priorities, ensuring menus and recipes are followed, and scheduling adequate times for individual breaks.
Work closely with the Tour Operations team on ordering, inventory, maintenance, and schedule.
Demonstrated abilities as a cook and manager.
Signed Participant Safety Agreement
Available for full term of contract - mid-June to the DCI World Championships in August, 2020.
Love of drum corps
Experience as professional cook or chef in commercial kitchen, particularly serving meals to large groups regularly.
